    ¶ Knox County is fortunate to have a health department with adequate personnel to monitor food serving safety.
    ¶ It is easy to run up a health attention bill of five figures ($10,000+) from food that has become contaminated.
    ¶ Clean hands are super important when preparing food that is not cooked, e.g. produce salad.
