GAMBIER — Healthy cooking includes fresh ingredients, and Chuck Carey, director of food and nutrition services at Knox Community Hospital, whipped up two recipes to prove that point at Sunday’s Earth Day Festival.

One was a colorful spring salad.

“It’s the perfect time of year to start thinking about doing these kinds of recipes because herbs are just starting to grow,” Carey said. “It’s the perfect season. You will start getting some of the fresh herbs you normally wouldn’t get in the wintertime. All the stuff can be grown locally. Definitely the fennel can and you will be able to get microgreens locally at some of the local greenhouses. You’re able to make the vinaigrette here. Everything you can pretty much do locally.”
