MOUNT VERNON — The tastes of fresh Mexican burritos and tacos are now available in Mount Vernon with today’s opening of Chipotle Mexican Grill. Located in the former Bob Evans at 857 Coshocton Ave., Chipotle Mexican Grill staff had a “mock run” on Monday to prepare for today’s official opening.
“This was kind of a dry run where we can iron out any kinks so that everybody is comfortable with what they’re going to be doing,” said manager Bill Keaser. “It was by invitation only. And it went pretty well.” A total of 25 employees are currently on staff.
In deciding to bring a Chipotle Mexican Grill to Mount Vernon, customers were reportedly asking at the Heath and Mansfield locations about adding another in this area, according to Keaser. He describes their food as an all-natural, organic Mexican flair. On the menu at Chipotle are burritos, hard and soft tacos, burrito bowls, salads, and chips with salsa and guacamole. Burritos and tacos can be custom-ordered with the ingredients of chicken, steak, pork, beef, tomato salsa, corn salsa, cilantro-lime rice, black beans, pinto beans, fajita vegetables, guacamole and other specialties.
With the restaurant facility basically ready to go, only a little bit of landscaping outside is yet to be completed. Indoor seating at tables and stools is available as well as outdoor patio seating for when the weather permits.
Hours of operation are 11 a.m. to 10 p.m. seven days a week.
